For a Healthy, Tasty Pesach

Enjoy these healthy—and delicious—Passover recipes, courtesy of Hadassah Medical Center's Diet and Nutrition Department. Remember: one matzah has the calories of two slices of bread, and a very small portion of matzah brei is the equivalent of 3 slices.

Orange Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 sweet potatoes, peeled and chopped
  • 2 carrots, peeled and chopped
  • 1 butternut squash, peeled and chopped
  • 1 potato peeled and chopped
  • 8 cups water
  • salt and pepper to taste
  • 1/4 tsp. nutmeg (feel free to substitute the nutmeg with allspice or cinnamon)

 

Method
Sautee the onion in the olive oil until translucent. Add remaining ingredients and sautee for 3-5 minutes. Add water and bring to a boil. Simmer 30-60 minutes. Puree and serve hot.

 

Green Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic chopped
  • 1 leek washed and chopped
  • 4 celery stalks, washed and chopped
  • 4 zucchini, peeled and chopped
  • 4 cups spinach washed and chopped
  • 1 potato peeled and chopped
  • 8 cups water
  • salt and pepper to taste

 

Method
Sautee the onion in olive oil until translucent. Add remaining ingredients and sautee for 3-5 minutes. Add water and bring to a boil simmer for 30-60 minutes. Puree and serve hot.

To serve both soups together
Spoon one big spoon of the green soup and one big spoon of the orange soup into a soup bowl. Garnish with parsley.

Roasted Beetroots

Ingredients

  • 5 beetroots peeled and cubed
  • 2 tbsps olive oil
  • 2 cloves garlic chopped up
  • 1 orange
  • salt and pepper to taste

 

Method
On a roasting pan, spread out beetroots; mix with olive oil, salt, pepper and garlicRoast at 350 degrees F for 30 mins. Turn beets over and squeeze orange juice on the beets. Roast additional 30 mins. Remove from oven.
