Soup's On Fundraiser 3-15-11

Cincinnati Chapter of Hadassah held a soup cooking demonstration fundraiser on Tuesday, March 15th at Rascals' New York Deli in Blue Ash, OH. Over a dozen Hadassah members gathered at 6:30 p.m. to enjoy an optional dinner at Rascals' before the cooking demonstration began.
At 7:30 p.m., everyone moved into the kitchen as the restaurant was closed to other patrons. Everyone received printed recipes for the three vegetarian soups. Sous Chef Ryan Chitwood and Head Chef Mike Werner started off the evening with a delicious Cantaloupe Soup that tasted like dessert. Then, they prepared a spicy Vegetarian Chili and a smooth, rich Cauliflower Saffron Soup. They demonstrated techniques for slicing shallots and leeks, and recommended sauteing the onions and blending the ingredients in small batches. Everyone received samples of each soup in small "taster" bowls. The soups demonstrated are often available on the menu at Rascals'.
After the demonstration, Rascals' owner Gary Zakem pulled the winning raffle tickets for gift certificates. Many thanks to Gary Zakem and Rascals' for hosting this entertaining event!
