Cheryl Kaplan's Hamentashen

 1/2 cup buttersoftened (real)
 1 cup sugar
 1 egg
 1 tsp vanilla extract
 2 cups flour
 2 tsps baking powder (powder - remember)
 1/2 tsp salt
 1 TBSP milk (or orange juice if you wish)

Cream butter and sugar; add egg, vanilla and milk and mix well. Combine flour with baking powder and salt. Combine wet and dry ingredients. Mix well and divide into 2 equal flat circles. Refrigerate overnight or at least 20 minutes if you're in a hurry. Roll out dough 1/8" thick and cut into circles. I use a 2 inch cutter. Using a teaspoon, place filling in the middle of the circle and bring 3 sides together to form a triangle. Bake on ungreased cookies sheets (or use parchment paper). Bake at 350 for approx. 23 minutes (depending how crunchy you want them). Solo brands are my favorite, however I also use chocolate, homemade apricot filling (cut up dried apricots and add orange juice, simmer until soft and gooey.) I also use chocolate chips, as well as guava jelly). Be creative and enjoy!
